Diabetic Oatmeal Raisin Cookies



Ingredients
1 cup self-rising flour
1/2 cup butter
2 tablespoons white Splenda granular
2 tablespoons milk
1 1/2 cups quick oats
1 egg
1/4 teaspoon cinnamon
1/3 cup splenda brown sugar substitute
1/2 teaspoon vanilla
1/2 cup dark raisin
Directions
1. Preheat the oven to 325 degrees.
2. Mix the flour with the cinnamon.
3. Cream the butter and both the sugars until fluffy. Add the egg, milk, and vanilla.
Gradually add the flour mixture.
4. Stir in oats and raisins.
5. Drop by teaspoonfuls if small cookies are desired, tablespoons if larger cookies
are desired onto parchment paper (this stuff is reusable - one sheet will do the
whole batch).
6. Bake until golden brown, 10-12 minutes. Cool on wire racks

Skinny Mini Meringue Cookies


Prep Time: 15 minutes
Bake Time: 40 minutes (allow to cool in the oven for at least 3 hours)

Ingredients
3 egg whites
1 teaspoon vanilla extract
½ teaspoon cream of tartar
⅛ teaspoon salt
¾ cup white sugar
75 M&M’s, I bought a large bag of Valentine’s Day red, pink and white M&M’s, see shopping tip
1 tablespoon pink or red sugar

Instructions
1. Preheat oven to 250 degrees. Line a baking sheet with parchment paper or coat with cooking spray.
2. In an electric mixer or large bowl, beat egg whites until foamy. Add the vanilla, cream of tartar and salt. Beat on high until stiff peaks form. It should look like marshmallow cream. Add the sugar 1 tablespoon at a time and beat until glossy and smooth.
3. Drop the batter by a rounded teaspoon size onto the pan. It’s ok to place close together as they don’t spread much.
4. Press 1 M&M candy into each and sprinkle with a pinch of sugar. You should only use a small pinch for each.
5.  Bake for 40 minutes. Turn off oven and do not open door. Allow to cool in the oven for at least 3 hours. No peaking! They can stay in the unopened oven overnight, if desired.
6. Store in an airtight container and these kisses will keep for several weeks.

Sugar Free Valentine Cookie Recipe



Instructions

      Mix together the Crisco shortening, artificial sweetener and egg. Blend well with a hand mixer.

      Combine the flour, salt and baking powder in a separate bowl.

      Add the milk, vanilla and water to the wet mix.
    • 4
      Put all the ingredients together and mix them well.
    • 5
      Chill the dough in the refrigerator until firm, about 3 hours.

      Roll out the dough with a rolling pin to about 1/8 inch thick.

      Press the cookie cutters into the dough to make Valentine heart cookies.

      Place egg yolks in a bowl, and add a teaspoon of red food coloring. Mix together. Brush the color onto the cookies before they bake.

      Bake cookies at 325 degrees for 8 to 10 minutes. Allow cookies to cool.
Sugar Free Cream Cheese Frosting

Prep Time: 5 minutes

Total Time: 5 minutes

Ingredients:

  • 8 oz package cream cheese
  • liquid sucralose equivalent to about 2/3 cup of sugar (or to taste)
  • 3/4 teaspoon vanilla extract
  • 1/2 - 3/4 teaspoon caramel flavoring
  • 2 tablespoons water

Preparation:

Using a mixer, combine all ingredients and beat until smooth.

For a spread, don't add any water. I use about half the sweetener of frosting when making a spread.

Variations: Try using maple flavoring, or basically any kinds you want!
Nutritional Information: Two tablespoons of spread, or one of eight servings of frosting has less than 1 gram effective carbohydrate plus 2 grams protein, and 89 calories. For one of nine servings of frosting, it's still less than a gram of carbohydrate, 2 grams protein, and 100 calories.

Cream Cheese Diabetic Cookies Valentine's Day


1 cup butter, softened
1 8 oz. pkg. cream cheese, softened
2 cups flour
1 cup Sugar substitute (for baking)
1/4 tsp. salt
Dried fruit
Mix first four ingredients. Refrigerate.
Roll out on a lightly floured work surface and cut into small circles.
Wash and dry fruit (apricots, dates, peaches, or prunes, etc. may be used). Fruits may be soaked in alcohol for 30 minutes to rehydrate and sterilize them.
Place one apricot half on top of circle of dough on top. Seal around the edges.
Bake at 350°F for 10 minutes or until golden brown. Cookies freeze well.
Note: For calories per cookie, divide 3528 by the number of cookies made.

Diabetic Sunshine Orange Cake




A carb-controlled dessert the whole family can enjoy.
Yield: Makes 12 servings 
Ingredients
  • 1/3 cup margarine
  • 1/4 cup brown sugar replacement (Sugar Twin Brown)
  • 1 teaspoon sugar replacement (Splenda or Sugar Twin)
  • 1 large egg
  • 1-1/4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon ground cinnamon
  • 1/3 cup raisins, or finely chopped fresh apple
  • 1 teaspoon grated orange zest (peel)
  • 2/3 cup unsweetened orange juice
Directions
  1. Preheat oven to 350F. Lightly coat an 8x8x2-inch baking pan with cooking spray.
  2. In a mixing bowl, combine margarine, sweeteners and egg. Beat on medium speed 2-3 minutes; scraping sides of bowl as necessary.
  3. In medium bowl, sift together flour, baking powder, baking soda and cinnamon. Stir in raisins or apples and orange zest. Add to first mixture, alternating with the orange juice, beginning and ending with the flour mixture.
  4. Pour the batter into the prepared pan. Bake 18-20 minutes, or until a wooden pick inserted in center comes out clean. Cool cake in pan on wire rack.

Chocolate Coffee Tiramisu


Makes: 16 Servings
Ingredients
  • 1-1/2 cups 5% ricotta cheese
  • 1/2 cup light cream cheese
  • 1/2 cup granulated sugar
  • 3 tablespoons cocoa
  • 1 egg yolk
  • 1 teaspoon vanilla
  • 3 egg whites
  • 1/3 cup granulated sugar
  • 3/4 strong, prepared coffee
  • 3 tablespoon chocolate or coffee-flavored liqueur
  • 16 lady finger cookies
Directions
  1. Spray a 9-inch square baking dish with vegetable spray.
  2. In a food processor, combine ricotta cheese, cream cheese, 1/2 cup sugar, cocoa, egg yolk and vanilla until smooth; transfer to a bowl.
  3. In bowl, beat egg whites until soft peaks form. Gradually add 1/3 cup sugar and continue to beat until stiff peaks form. Gently fold the whites into the ricotta mixture.
  4. Combine coffee and liqueur in a small bowl.
  5. Put half of lady fingers in bottom of dish. Sprinkle with half of coffee-liqueur mixture. Spread half of ricotta mixture on top. Repeat layers. Cover and chill for at least 3 hours, or overnight.

Cherry Coconut Macaroons






Servings: 35 (Serving = 1 piece)
Ingredients
  • 2 large egg whites
  • 1/4 teaspoon cream of tartar
  • 1/3 cup sugar substitute
  • 1 teaspoon almond extract
  • 2-1/4 cups grated coconut
Directions
  1. Preheat oven to 375 degrees F. Place the egg whites and cream of tartar in a large bowl. Beat until stiff peaks form. Continue beating, adding the sugar substitute. Fold in the almond extract. Then fold in the grated coconut. Mixture will be stiff.
  2. Drop by teaspoonfuls onto a nonstick cookie sheet. Bake 20 minutes.
  3. Remove macaroons to a wire rack to cool. Cookies will be 1" in diameter.
